Now my question is can open the shuttle bay doors by pushing a button, and can you do the sme with the landing wheels or whatever they are.

I'm quite sure that they are much the same way as in BC3000AD, no buttons for shuttle bay doors or landing wheels. Are you sure you want more control on this little details when you think all the control that you have in larger scale, huh?
